Lamb
COVAP's lambs are born and bred in the pastureland of the Valle de los Pedroches, Valle de la Serena and Valle de la Alcudia, where the weather conditions are perfect for the flocks' diet and development.

Most of the animals bred by our partner farmers are merino sheep. This breed originally came from this part of Spain. It can feed on woody pasture in the summer months, and can roam for long distances. Most importantly, these sheep have excellent genetic potential for meat production.

The lambs are tagged at birth, and the farmers monitor their diet, weight and growth. When the lambs are fully developed and have reached their target weight of between about 18 and 22 kg, the farmers hand them over to COVAP's Classification Centre. Here, the lambs are fattened up until they are all the same size and their meat is of a standardised quality. They are fed feeds produced at COVAP's own facilities. When they are between 70 and 100 days old and weigh between 25 and 28 kg, they are sent in batches to be slaughtered. Our lamb meat is sold quartered or as a whole dressed carcass, and has been awarded the CERTICAR quality seal.
