Our Facilities
Producing milk is one of the Cooperative's primary focuses. As a result, since 1964, our dairy production methods have gradually been modernised so that we can continue to meet the changing demands of the market. COVAP's milk plant, which was opened in 2002, has a surface area of 14,000 m², a production capacity of 200 million litres of milk per year, and is the most technologically-advanced milk production plant in Europe.
TRACEABILITY AS A KEY ELEMENT IN THE PRODUCTION OF TOP-QUALITY MILK
380 partner farmers are involved in the Cooperative's milk production process. Their farms are all within 20 km of the plant, which means that milk can be collected daily. Furthermore, the milk bottled by COVAP has to adhere to a series of strict criteria to ensure quality. These quality controls are applied during each of the different stages of production:
- At origin: supervising the farms.
- At collection: using our lab analysis tanker network.
- At the production plant, where there is an in-house laboratory. The UHT and dairy product manufacturing processes are also ISO 9002-certified and accredited by IQNet.
WHAT IS UHT Processing? Ultra High Temperature
UHT processing was a great step forward in the history of long-life liquid milk production. Once the milk's levels of fat, dry matter and protein have been standardised, it undergoes a direct heat treatment consisting of a steam injection that increases the temperature of the milk to 148 °C for 2.3 seconds.
The steam is then extracted and the temperature reduced to 25 °C. With this treatment, long-life milk maintains the same characteristics as fresh milk, with all its flavour and nutrients.
